The Elephant Lounge Brings a Neighborhood Chef to Parker Square's Quiet Corner

In 2026 Parker Square picked up a new dinner restaurant, a renamed Tex-Mex kitchen, a boba shop and a Saturday market on the greenspace. All four are small, and none of them is a large development project. The biggest of them, The Elephant Lounge, was designed around one idea its chef picked up at a tiny wine bar in New York. A restaurant, he decided, does not have to be a massive undertaking.

That idea helps explain the whole square. In a town where new development usually means large projects, Parker Square has been filling its storefronts with places run by the people who own them. The Elephant Lounge is the latest and the clearest example.

The corner at 890 Parker Square Road sat quiet for most of a year

The Elephant Lounge took over the space at 890 Parker Square Rd. that used to be Vieux Carré. Vieux Carré opened in August 2023. According to Community Impact, founder Carrie Britton wanted it to be an approachable, "fun French" restaurant. The Cross Timbers Gazette's November 2025 business roundup reported that it had closed.

Here is how the space changed hands:

  1. August 2023: Vieux Carré opens at 890 Parker Square Rd.
  2. Late 2025: Vieux Carré closes.
  3. March 16, 2026: The Gazette reports that The Elephant Lounge will take the space and that owner Mike Lawson expects to open before June 1, with minor renovations underway.
  4. September 29, 2026: The Elephant Lounge opens its doors on a Tuesday at 5 p.m.
  5. October 10, 2026: The Town of Flower Mound posts an announcement welcoming the restaurant.

The opening came about four months after the original target. Counting from Vieux Carré's closing, the corner was dark for most of a year. The March report described only minor renovations, with Lawson as both owner and head chef.

A chef who lives nearby, and a name with two sources

Lawson lives near the area, according to the Gazette's March announcement. He graduated from Texas A&M, where he served in the Corps of Cadets, and then changed careers and attended the Culinary Institute of America. Before Parker Square he was a chef at Eataly in NorthPark Center, Sachet and Gemma, all well-known Dallas dining rooms.

The name comes from two places. One is the "elephant pants" worn by the A&M Corps of Cadets. The other is a small New York wine bar called The Elephant that Lawson kept going back to while he was at the CIA. He told the Gazette:

"It was just a guy cooking and his wife running the bar at this tiny place and it showed me a restaurant doesn't have to be a massive undertaking, it's just the importance of good food."

When the restaurant opened, the Gazette's opening story said it would focus on quality food and service "rather than overall glitz." Lawson also told the paper that techniques from "extremely fancy places" would show up in dishes that seem simple. Put together, his background and his stated plan describe fine-dining training aimed at a neighborhood room.

What's on the menu, and when to go

The kitchen cooks mostly Italian and French dishes, with some other global influences. The Town's welcome announcement named several dishes:

  • Mini beef Wellington bites
  • Crispy fingerling potatoes
  • Braised short rib
  • Ricotta-spinach ravioli

The Gazette reported evening hours Tuesday through Saturday, 5 to 9 p.m. Tuesday through Thursday and 4 to 10 p.m. Friday and Saturday. If you're planning an early weekend dinner, check with the restaurant before you go.

Next door, a rename instead of a replacement

Two doors down at 930 Parker Square Rd., Gabriela & Sofia's Tex-Mex is now Arroyo's Tex-Mex. The owners are the same. Arroyo's website lists the Parker Square address and calls the restaurant family-owned. Parker Square's online directory lists Arroyo's Tex-Mex, but further down it also keeps the old name, Gabriella and Sofia's Tex Mex, in Suite 930. Both entries are the same restaurant.

That makes two storefronts on the same short stretch of Parker Square Road that changed in 2026. One went to a chef who lives nearby, and the other kept its owners and changed its name.

The rest of the square, from breakfast to dessert

The Elephant Lounge opens in the evening, and it shares the square with a set of daytime places. Here are the food and drink tenants in Parker Square's directory, arranged by when you'd most likely stop in:

Time of day Tenant Suite
Morning Morning Edition Cafe 380
Morning Cerulean Blue Coffee House 420
Morning Hive Bakery 360
Afternoon Boba Bar 330
Afternoon Grandpa Joe's Candy Shop 650
Evening Grutogi Bistro 310
Evening Enzo's NY Pizzeria 990
Evening Arroyo's Tex-Mex 930
Evening The Elephant Lounge 890

Boba Bar is the other new name on the list. FloMo Bee reported it open by the end of July 2026. So the square added a summer afternoon spot and a fall dinner spot within about two months of each other.

Spread across the day like this, the square covers coffee, a sweet stop and four dinner choices in one place where you can park once. The center describes itself as a square set "around a historic gazebo and shaded greenspace, all within a short stroll," with a founding year of 2001.

Saturdays on the greenspace

The greenspace itself got busier in 2026. The Cross Timbers Gazette reported in February that a farmers market would return to Parker Square starting March 7, 2026, set up around the gazebo and greenspace from 9 a.m. to 2 p.m. The square's market page lists local produce, baked goods, sweets, honey, coffee and handmade goods, plus Kidpreneur booths for young sellers.

The name can be confusing. Parker Square lists its Saturday market as the Flower Mound Farmers Market. A separate market was reported in October 2024 as moving to The River Walk at Central Park on Sundays from 10 a.m. to 2 p.m. If someone suggests meeting at "the farmers market," ask which day they mean.

The square's posted market schedule lists Saturdays in October through Oct. 31, and booth applications are listed as closed. Before you plan a November Saturday around it, check the market page for new dates. Morning Edition Cafe, Cerulean Blue and Hive Bakery are open either way.

How the square fits into the season ahead

The Town's own holiday event happens across town. The Christmas Parade and Tree Lighting is Saturday, Dec. 5, at Gerault Park, 1200 Gerault Road. Festivities start at 5:30 p.m., and this year's theme is "A Star-Spangled Christmas," according to the Town of Flower Mound.

The two places work together for that evening. The parade starts at dinnertime on a Saturday, and The Elephant Lounge stays open until 10 p.m. on Saturdays. Going by the Gazette's reported hours, you could watch the parade and then come to Parker Square for a late dinner. Call ahead on parade night.

For the rest of November, Parker Square works much as it did before, with morning coffee and pastries, evening dinner, and a greenspace around the gazebo that hosts whatever is on the square's events calendar. What changed this year is who's cooking. A neighbor trained in Dallas's best-known kitchens took the corner that sat empty, and the family next door changed its sign without leaving.
